Easy Blueberry Cobbler with Cinnamon Whipped Cream

Nothing says summer like a long, sunny day at the lake followed by a barbecue and a big scoop of easy blueberry cobbler for dessert. There’s just something so dreamy about the fluffy biscuits with cinnamon whipped cream surrounded by blueberry goodness. And the best part? We have a blueberry cobbler recipe that’s super easy to whip up, so you can make this part of your warm-weather routine. 

You can use either fresh or frozen blueberries, as both options will create a delicious dish. But keep in mind that frozen berries will create more moisture in your filling. If you want a thicker filling for your cobbler, opt for fresh berries. If you want a thinner, more runny dessert, use frozen blueberries. If blueberries are in season, you could even take your family blueberry picking and make this dessert extra special with your hand picked berries.

The Filling

It’s easy to think that the filling in this blueberry cobbler is the best part, and you’d probably be right. There’s just nothing like blueberries with sugar and a light lemon cream for some zing. Don’t forget the cornstarch—it gives your filling a little thickness and that classic cobbler texture. It’s so good you might find yourself scraping the side of the pan to get the last little bite before it’s all gone.

The Biscuits

The other star of this easy blueberry cobbler are the delicious biscuits scattered on top. The great thing about having individual biscuits is that each person can easily help themselves to their serving without too much effort. Simply scoop a biscuit with some filling and voila!

Blueberry Cobbler with Cinnamon Whipped Cream

This blueberry cobbler is easy to throw together in just over an hour and will satisfy anyone’s sweet tooth.

Ingredients:

– 3 lb. fresh or frozen blueberries
– ¾ cup of sugar + ⅓ cup of sugar + 3 tbsp. more
– ¼ cup of cornstarch
– 3 tbsp. lemon juice + 2 tsp. lemon zest (from 1 lemon)
– 1 ⅓ cups flour, plus more for dusting
– 2 tsp. baking powder
– ¾ tsp. kosher salt
– 2 cup heavy cream + 1 tbsp. more
– ½ tsp. ground cinnamon

Instructions

  • Preheat oven to 400°

For the Filling

  • In a 12-inch cast-iron skillet or 3-quart baking dish, mix the berries, sugar, cornstarch, and lemon juice. Set aside.

For the Biscuits

  • In a medium bowl, whisk the flour, baking powder, salt, and 1/3 cup sugar. 
  • In a small bowl, stir the lemon zest into 1 cup cream. 
  • Using a fork, stir the lemon cream into the dry ingredients just until moist clumps form. 
  • Transfer to a lightly floured work surface. Knead the dough 5 to 6 times. 
  • Pat the dough into a 4 1/2-by-7-inch rectangle that’s 3/4 inch thick. Cut the dough into 8 rectangles; arrange these on top of the berries in the dish. 
  • Brush the biscuits with 1 tbsp. cream. Sprinkle 2 tbsp. sugar over the biscuits and berries.
  • Bake until the juices bubble at the edges of the pan and the biscuits are browned and cooked through, 45 minutes to 1 hour. Let rest for at least 15 minutes before serving.

For the Cinnamon Whipped Cream

  • While the cobbler bakes, in a medium bowl, beat the 1 cup heavy cream, 1 tbsp. sugar, and the cinnamon until soft peaks form, about 2 minutes. Serve with the cobbler.
